Winemaking Notes: Our 2010 Merlot grapes were hand-harvested in ½ ton bins at our Knights Valley vineyard on October 13th. The grapes were de-stemmed, then whole cluster pressed to .8 bar to yield 165 gallons per ton of fruit. After cold soaking for three days to stabilize the rich colors & flavors, the grape juice was then inoculated with yeast at 75-80 degrees. The must was pumped over 3 times/day during fermentation. Then, the wine was pressed off into barrels and tanks to add more complexity and allowed to go through malolactic fermentation. The wine was then racked and aged 18 months in French Oak barrels, cross-flow filtered and bottled on May 16, 2012.
